Soak peas
Sautee onions
Combine onion, peas, ham, lemon, carrots, celery, salt & pepper with 1 1/2 quarts water
Cover, bring to boil, reduce heat and simmer for 3 hours
Run through coarse sieve
Thin with milk if desired
Serve with croutons
Makes 8-10 servings
